The Mighty Lamb & Chicken
Palestine is a land of meat eaters (even if you were starting to think you had bought a vegetarian cookbook), with lamb and chicken being the most widely eaten. Lamb has a very distinct, identifiable flavour and we like our food to stand out, which is why it is used a lot, rather than beef or pork. You can substitute most dishes with beef if you prefer, it will not ruin the dish, so it’s really just down to personal taste. Pork is never used, and pigs are not actually kept as farm animals in Palestine as it is mainly a Muslim country; I have personally never seen an authentic Middle Eastern dish with pork in it. Palestinian meat dishes are tender, fall-off-the-bone and succulent and are so varied in flavour that I am sure they will become firm favourites in your home in no time.
